Basics:
The basic skin pack use - from ~-kol - it's called Panther 1.5: [link] - check his gallery, there's also a OSX Tiger version. You need StyleXP [link] for this. With fonts and wallpapers, in aqua blue and graphite.
Y'z Dock - The Mac like program launcher dock: [link] Can be customized with icons and "docklets" (clock, trash can etc.)
Y'z Shadow - Adds the mac shadow effect: [link]
Winamp Skins:
iPlay - A winamp skin that looks like a minimized iTunes: [link]
iPod G4 - A Winamp skin that looks like an iPod: [link]
Tiger Brushed - A classic Winamp skin with a brushed look: [link]
But hey, you should prefer the original Apple iTunes Software anyway
Other skins:
Safarifox - A skin for transforming Firefox 1.0 into Safari for Mac OSX: [link]
Apple Mail skin for Thunderbird: [link]
For a really big conversion with folder icons, sounds, cursors, boot screen and much more you should try FlyakiteOSX [link] - it's a huge conversion pack with integrated ~-kol's Panther 1.5 Skin, easy to install and to remove. No other program needed to run. Check the screenshots [link] and you'll know what i mean... If you don't want to install the whole package, you can extract it and use only parts of it, e.g. the cursors.

Ever since the day you decided I was your bisque doll,
Blood won't flow from my wounds, and on sad days I can't cry
So won't you love me even a little?

I am quite used to the standard Win icons for folders, drives, document, so i still use the old ones
But you can remove everything
